The rum is named after the character of Don Quixote. The rum is distilled from a continuous still and aged in barrels of oak for up to a year, adding a golden color and rich taste to the rum. The rum was officially started in 1865 by the son of the plantation owner, Don Juan Serrallés, at his extensive plantation in Ponce, Puerto Rico. He imported copper still from France to make the rum.
